Beef Bake Casserole

2 cups uncooked corkscrew macaroni
1 lb. ground beef
1 (10-1/2 oz.) can condensed Cream Of Celery Soup
1 (14-1/2 oz.) can whole or diced tomatoes
3/4 cup chopped green peppers (optional)
3/4 cup shredded cheddar cheese
3/4 tsp. seasoned salt
Shredded Cheese for topping.

Cook macaroni; drain. Brown ground beef; drain fat. Combine all ingredients, except cheese for topping. Pour into a greased 2-qt. casserole dish. Cover and bake at 350 for 30 minutes. Uncover and sprinkle with cheese. Makes 4-6 servings

Potato - Hamburger Casserole

3 c. potatoes
1 lb. hamburger
1 cup onion, chopped
1 1/2 cup green pepper, chopped
1 can tomato soup
1/2 c. water
1 tsp. salt
Black pepper to taste

Slice potatoes and cook in water until almost done. Brown hamburger, onion and pepper in skillet. Add salt and pepper. Arrange hamburger mixture and potatoes alternately in large casserole dish. Pour tomato soup mixed with 1/2 cup water over this. Cover with foil and bake at 425 degrees for 30 minutes.

Cranberry Dessert

4 cups cranberries, ground
3 cups sugar + 4 TBSP
2 diced bananas
4 cups vanilla wafer crumbs (reserve about 3/4 c for topping)
12 TBSP butter, melted + 1 cup butter
1 cup chopped nuts
2 cups whipping cream
1 tsp. vanilla

Grind 4 cups cranberries. Mix with one cup sugar and 2 diced bananas.

Mix 4 cups vanilla wafer crumbs (minus what you reserve for topping). Take 12 TBSP melted butter and pres in 9x12" glass cake pan and cool.

Cream 1 cup butter with 2 cups sugar until light and fluffy. Fold in one cup chopped nuts. Spread on crust and add cranberries.

Whip 2 cups whipping cream. Add 4 TBSP sugar and 1 tsp. vanilla. Spread on cranberries and top with reserved crumbs.

Chill 6 hours or overnight. Serves 12-16

Broccoli Salad

1 regular bunch of broccoli (stems and tops), chopped
1 small bunch of green onions, sliced
1 pkg real bacon bits (I use Oscar Mayer)
1 3 oz snack size pkg sunflower seeds (or about 1/2 cup)
4 oz grated cheddar cheese

Mix all ingredients together. Add dressing 30 minutes before serving, to keep things crisp.

1 c. mayonnaise
3 T. vinegar
1/4 c. sugar

This recipe doubles well.

Easy Orange Mandarin Cake

1 pkg. yellow cake mix
1 sm. can mandarin oranges (do not drain)
3 eggs
1/2 c. oil

Combine all cake ingredients and mix lightly in mixer. Pour into greased and floured 13 x 9 pan. Bake at 350 degrees for 35-40 minutes. Let cool.

1 (20 oz.) can crushed drained pineapple
1 (8 oz.) container Cool Whip
1 sm. pkg. vanilla instant pudding

Beat all frosting ingredients with mixer well. Frost cooled cake. Refrigerate to keep. This is a cake that is even better several days after it is made, because it becomes more moist.

4 small skinless, boneless chicken breasts, pounded to 1/4-inch
Salt and pepper to taste
Olive oil or olive oil spray
8 slices bacon, fried crisp and drained on paper towels
2 small tomatoes, sliced
4 romaine lettuce leaves, cleaned and patted dry
4 medium-sized sandwich rolls

Sprinkle the chicken with salt and pepper, then drizzle or spray with olive oil on both sides. Heat an outdoor grill, grill pan or sauté pan over medium-high heat. Add the chicken and grill or sauté until lightly browned and cooked, about 4 minutes per side depending on heat source. Split the rolls in half.

If desired, remove some of the bread from the inside. Spread both sides with mayonnaise. Place the chicken on the bottom half. Top with the bacon, tomato slices and lettuce. Close the sandwich with the top half of the roll.
Makes 4 Sandwiches

I Don't Know Casserole

7 small baking potatoes, peeled and sliced
1 1/2 - 2 pounds ground beef
1 (16 ounce) package frozen mixed vegetables, thawed
1 (10.75 ounce) can condensed cream of celery soup*
1 cup shredded Cheddar cheese**
1/2 cup onion (optional)
1/2 bell pepper (optional)
salt and pepper to taste

Preheat the oven to 350 degrees F.

In a medium bowl, stir together the mixed vegetables and celery soup and the onion and bell pepper if desired . Set aside.

Place the potatoes in a large saucepan with enough water to cover. Bring to a boil, then simmer over medium heat until tender,
about 5 minutes. Drain and set aside.

Meanwhile, crumble the ground beef into a large skillet over medium-high heat. Cook until evenly browned, stirring to break up large lumps.
Drain excess grease from the beef and place in the bottom of a 9x13 inch baking dish.

Pour the vegetable mixture over the beef, then arrange the potato slices over the vegetables. Season with salt and pepper. Sprinkle cheese over the top.

Bake uncovered for 25 minutes in the preheated oven, until cheese is melted and the dish is heated through and bubbly.

*May use the cream soup of your liking. The original recipe uses Cream of Mushroom. **May use the cheese of your liking. I have used various kinds and they all turn out very good.!

Curry Chicken

1 stick of butter
1 cup of honey
1-2 tbsp curry powder

Amounts can be adjusted for taste. Boneless, skinless chicken breasts are used, but I use thighs.

Melt butter, honey & curry powder in a saucepan, pour over chicken. Cook in oven at 350 till chicken is done. Serve over rice.

Hamburger Casserole

1 1/2 pounds hamburger
1 cup onion, chopped
1 1/2 cups potatoes, chopped
1 cup carrots, sliced
1 cup canned corn, drained
1 cup frozen peas, thawed
1/2 cup bell pepper, chopped
1 can Cream of Celery soup

In a skillet, brown the hamburger until done. Drain. In a casserole dish, spread the beef out evenly. Layer the onion, potatoes, bell pepper and carrots. Add the corn and then peas. Pour the cream of mushroom soup on top. Cover and bake at 350F for about 45 minutes. Serves 6

Chocolate Three Layer Pie

1 1/2 sticks of melted butter
1 1/2 cups of flour(all purpose)
a dash of salt
a dash of baking soda
1/4 cup sugar
Combine in a bowl untill moist and kind of clumpy. Spread in a greased 9 x 12 glass baking dish with a fork evenly. Bake at 350 for 20 minutes or till lightly browned around edges.
Remove from oven and cool.

Next 2 boxes of jello instant chocolate pudding mix 3 1/2 cups whole milk. Combine and whip with wire wisk or fork for two minutes. Pudding will be smooth and start to thicken. Pour into baking dish and spread evenly with spoon.

Next mix in large bowl
16 oz cool whip
1 cup softenned cream cheese
1 cup sugar
one tablespoon of vanilla extract
Use beater or wire wisp to blend until smooth and creamy. Empty bowl into baking dish in the center and spread outward with fork carefull not to get chocolate on fork or spoon so it creates a nice white cover over chocolate. Then sprinkle 1/2 cup chopped pecans over the top. Chill for 1 hour

Meatloaf Burgers

1 egg
1/2 c. milk
3/4 c. soft bread crumbs
1/4 c. onions, optional
1/4 c. green bell pepper
1 1/2 tsp. salt
1/2 tsp. pepper
1 lb. ground beef
2 cans (6 oz. ea) tomato sauce*
*May substitute ketchup. Both are optional

Preheat oven to 350 degrees. Lightly grease pan.

Mix all the ingredients in a large bowl. Form into burger form. Pour tomato sauce or ketchup on top of burgers, if desired. Bake 30-35 minutes.

Green Chile Stew

2 lbs of cubed pork
2 lbs of Hatch green chilies, diced fine (hot or mild, your choice)
1 large potato, peeled and diced
2 1/2 cups of water
3/3 cup of flour
1 15 oz can diced tomatoes
1 15 oz can white hominy
1 tablespoon chicken bouillon (or 3 cubes)
1/2 tsp garlic powder
1/2 tsp celery salt
1/2 tsp lemon pepper

Brown the pork, add all ingredients (except the flour) into crock pot and cook overnight. After cooking overnight spoon enough liquid from the stew into the 3/4 cup flour to make a medium thick paste (approx. 1/2 to 3/4 cup) and stir into the stew. Allow stew to cook in the crockpot for another hour or two to thicken.

Stuffed Steak

1 large round steak
6 oz box Stove-Top Stuffing mix
10 3/4 oz. can cream of celery soup*
1/2 soup can water

Season round steak to taste. Prepare Stove-Top Stuffing as directed. Spread stuffing thinly over steak. Roll and secure with toothpicks or string. Place in casserole dish. Mix soup with 1/2 can of water. Pour over steak.

Bake at 350 degrees about 1 hour or until done.

Original Recipe uses Cream Of Mushroom Soup
I buy the smaller individual size thinner steaks.
(No cutting after removing from oven!)

Mozzarella Meat Pie

2 pounds ground beef
1/3 cup chopped onion
1/3 cup chopped celery
1 6 oz. package mozzarella cheese
1 package spaghetti sauce mix
2 8 oz. can crescent rolls

Brown ground beef; drain. Add onion and celery and cook till tender. Add rest of ingredients and only 1/2 cup of cheese.

Separate crescent rolls and line in a pie pan.
Put meat mixture in and top with remaining cheese.

Bake at 375 degres for 15-20 minutes or till crust is golden brown.

Boiled Cookies

mix together in heavy saucepan

2 cups sugar
3 heaping tbs cocoa
1/2 stick of butter or margarine
1/2 cup of milk

Stir frequently until mixture come to full boil.
Boil one minute then remove from heat.

Quickly add and stir in the following:
1/2 cup peanut butter
1 tsp vanilla
3 cups 1 minute oatmeal
1 cup chopped pecans

Drop by spoonful onto waxed paper or foil. allow to cool.

1 pkg. of Chips Ahoy cookies (I have used regular & peanut. butter/choc.chips) small bowl of milk for dipping (may need to add more as you dunk)
1 Lg. container of Kool Whip

Take a med/large bowl. You will start by Dunking the cookies into Milk, for only about 3-4 seconds. You don't want them to be Mushy. Put a Layer of the "dunked" Cookies into the bottom of the bowl.
Then spread a layer of Kool Whip covering the cookies. Repeat this process until you are about 2 inches from the top. (You should have about 10-15 cookies left) Do Not dunk these, you will Crush the remaining cookies on top of the mixture. Cover w/Foil and set in Fridge for a Full 24 hours. This is a very rich dessert, which is why I put 1/2 cup serving size. Serves: approx. 12 people--1/2 cup servings. Prep Time: 15 mins

This Recipe Doubles Really well. It's a Picnic Favorite. This also works with homemade Cookies as well.

Hamburger Hash

1 - 1 1/2 lbs. hamburger
1 (15-16 oz.) can corn
2 med - large potatoes, diced
1/2 onion, diced

Brown hamburger meat until done. Drain. Add all other ingredients into hamburger meat and cook covered, on med-low for about 20 minutes or
until potatoes are done.

Note: I have used other vegetables in addition to or in place of the corn. I have also used bell pepper and celery. May make this recipe with chicken or sausage as well and is still very good.

Tuna Salad

1 medium size bag of pasta shells
2 (6 oz.) cans tuna (I use water packed)
2 celery ribs from the stalk, cut in the middle long ways, then diced
1 can sliced water chestnuts
1 can sweet peas*
1/4 of a large onion, diced*

* may substitute one can DelMonte peas / pearl onions in a can (I can only find them at my local Kroger)

While cooking pasta, put all other ingedients except mayonnaise in a big bowl. When pasta is done, drain and put in with other ingredients. Mix well. Add mayonnaise to your likeness. Chill & Serve.
